Nordic Ware’s Stovetop Kettle Smoker is one of the better indoor smokers available. Most indoor smokers have no lid or a shallow low profile lid. The Stovetop Kettle Smoker has a high domed lid big enough for smoking/roasting a whole chicken.
Made of aluminized steel, internal parts have a non-stick coating and the outer parts are coated with an attractive porcelain enamel. It consists of a 13.5″ diameter smoker base, drip tray, food tray, lid and thermometer with a red arrow at the 210 mark – Nordic Ware’s suggested cooking temp. Bi-metal heat indicators are notoriously inaccurate. We hope this one is calibrated for Nordic Ware’s unique device. The handle is metal and one must use gloves or pot holders to touch it. There is also an instruction manual with recipes. Nordic Ware makes it clear that ventilation above the stove is required.
It comes with two small containers of Cameron’s Hickory and Apple Smoking Chips. Cameron’s makes one of the original indoor smokers and their wood chips are very fine. The Stovetop Kettle Smoker will work on gas, electric or induction stovetops. You place the base on the burner then sprinkle in two tablespoons of Smoking Chips. The drip tray goes on top of the chips. The tray can be used with or without liquid. Most of Nordic Ware’s recipes call for moisture to be added.
The non-stick food tray has openings to circulate heat and smoke and fits snuggly on the base. Unlike most indoor smokers, NW’s is capable of roasting somewhat large hunks, but ribs must be cut to fit on the 13.5″ cooking surface.
